THE BREWERY

The Hong Kong S.A.R. Brewing Co. Ltd. was established as South China Brewing Co. Ltd. in 1995. It was Asia's first Microbrewery. The goal was to give Hong Kong consumers the types of handcrafted beers the West has long enjoyed. Locally brewed in small batches the beers are always fresh with flavors that only craft brewing can offer. In 1998, the company was purchased by new owners who have invested in additional equipment to further improve the beer quality and product stability. Introducing state-of-the-art bottling and labeling equipment from Germany all products have recently undergone repackaging and re-branding.

The brewery is located in Aberdeen and currently producing Hong Kong Gold, a Bavarian style premium Lager, and Hong Kong Dragon's Back, an English style Ale. Apart from the brewery's main product range, it is also supplying major restaurant / bar chains in Hong Kong with customized specialty beers. All these products are freshly brewed using only the finest imported malt and hops and do not contain any chemicals or preservatives. This results in fresh, flavorful, crisp-tasting, natural beers unlike any other in the Hong Kong market.

HISTORY OF BEER

First traces of beer brewing can be dated as far back as 5000 years ago. However, the art of brewing, as we know it today was developed in the 15th to 16th century. The German beer purity law, the Rheinheitsgebot, was first introduced in Bavaria in 1516 by Duke William IV, gradually spreading to the rest of Germany. The ruling - the world's first consumer protection laws – insisted that beer should only be made from malt, hops, water and yeast. At The Hong Kong S.A.R. Brewing Co. Ltd. our beers are handcrafted in strict accordance with this law, i.e. no preservatives, chemicals or low quality raw materials are used in the brewing process.

SEVERAL STEPS TO CUSTOMER SATISFACTION

Mash/Lauter Tun and Brew Kettle
In the combined mash / lauter tun barley malt is mixed with water and heated to turn soluble starch into fermentable sugar. After mashing the mash is filtered, whereupon it becomes known as wort. The wort is then pumped into the brew kettle, where the beer wort is cooked and hops is added.

Fermenting Vessel
The cooked beer wort is filled into the fermenting vessel, where the yeast is added, which turns the sugar in alcohol and carbon dioxide. Hong Kong Gold, a bottom fermenting Lager, is fermented for four weeks at cold temperatures. Hong Kong Dragon's Back, a top fermenting IPA, is fermented for three weeks at warm temperatures.

Filter
After fermentation our beers are filtered to separate the yeast. At our brewery a Diatomaceous Earth filter with horizontal plates is used for filtration.

Pasteurizer
In order to stabilize our beers microbiologically our beers pasteurized at 60-70°C / 140-174°F.

Packaging
After pasteurization our beers are packaged either in 355ml bottles or in 30-liter kegs.
